This October, his acclaimed restaurant Kinara by Vikas Khanna at JA Lake View Hotel introduces a new quarterly dining series titled ‘Forgotten Flavours’, beginning with ‘Utsav – Festivals of India’.
Designed as an immersive journey through India’s culinary heritage, ‘Forgotten Flavours’ explores the country’s lesser-known recipes, regional traditions, and age-old cooking techniques, all reinterpreted with Chef Khanna’s signature elegance.

A Journey Through India’s Festivals
The debut edition, ‘Utsav’, took place on 3 October, and payed homage to India’s grand celebrations, from the sweet indulgence of Diwali to the festive feasts of Onam. Guests enjoyed a multi-course tasting menu that captured the joy, colours, and spirit of these festivals through flavour and artistry.
This series also highlights Kinara’s partnership Sula Wines, India’s most awarded vineyard, with their sommelier guiding guests through each curated pour. Adding to the intimacy, diners will have the rare chance to meet Chef Vikas Khanna in person, receive a bespoke keepsake menu, and take home an exclusive gift inspired by the evening’s theme.
With only 60 seats available, this one-night-only event promises to be one of Dubai’s most sought-after dining experiences of the season.
Reviving Culinary Traditions
At its heart, ‘Forgotten Flavours’ is about rediscovery, bringing to light the ancient recipes and stories that shaped Indian cuisine. Future editions will dive into evocative themes such as The Royal Kitchens of India, Peninsular Cuisine, Nomadic Food Traditions, and Forgotten Grains.

Since opening its doors, Kinara by Vikas Khanna has stood as a love letter to India’s rich culinary heritage. The restaurant’s earthy tones, dramatic spice displays, and handcrafted details make dining here feel like stepping into a story, one told through fragrance, color, and taste.
