A remarkable culinary reunion is set to unfold on 26 October as Avatara and Trèsind Studio, two of Dubai’s most acclaimed Indian restaurants, join forces for one night only for an exclusive four-hands dinner at Avatara – the world’s first MICHELIN-starred vegetarian Indian restaurant.
The evening will bring together Chef Omkar Walve, Head Chef of Avatara, and his mentor Chef Himanshu Saini, the creative force behind Trèsind Studio, the world’s first Three-MICHELIN-starred Indian restaurant and the Best Restaurant in the Middle East 2025. Seatings are available at 6pm and 9pm, and the experience is priced at AED 795 per guest.
A Culinary Relationship Built on Inspiration
For Chef Omkar, the collaboration is both personal and professional – a return to the creative roots where his culinary journey began under Chef Himanshu’s guidance.
Born and raised in the vibrant city of Mumbai, he discovered his love for cooking from a young age while helping his mother at local food stalls and fairs. His career trajectory took a massive leap in 2017 when he joined the Trèsind Group, which needs no introduction in terms of what it has done for modern Indian gastronomy and putting Indian fine-dining on the global culinary map.
Now, the two chefs unite as equals, crafting a 12-course vegetarian tasting menu that redefines the boundaries of Indian gastronomy.
“Chef Himanshu has been a mentor and inspiration throughout my career, and I feel a tremendous sense of pride collaborating with him on this special tasting menu at Avatara,” says Chef Omkar.
Chef Himanshu shares the sentiment: “Avatara is part of the Passion F&B family, and I believe it changed how the world views Indian vegetarian fine dining. This collaboration is about sharing creativity and inspiring each other once again.”
Reimagining Indian Cuisine
The dinner will see Chef Himanshu reinterpret some of his signature protein-based dishes into vegetarian creations, while Chef Omkar brings his refined artistry and regional storytelling to the table. Together, they promise an evening that celebrates innovation, mentorship, and the soulful evolution of Indian fine dining, and explores how this can bring a whole new dimension to vegetarian dining.
