The Chef Behind the Movement
Known for championing Filipino cuisine on the global stage, Chef JP Anglo’s culinary journey began at the Center for Culinary Arts in Manila before continuing at Le Cordon Bleu in Sydney. He went on to open a string of acclaimed restaurants in the Philippines, including the much-loved Sarsa, and represented his country at the San Sebastián Gastronomika in Spain in 2019.
Now based primarily in Dubai, his Kooya Filipino Eatery, now at a new home at Market Island Food Hall, is a space that embodies the warmth, generosity, and communal spirit of Filipino dining.

The Spirit of Kooya and Mama Shelter
At the heart of JP’s culinary philosophy is a simple but powerful belief: food is about connection. Kooya reflects this ethos, built around the idea that ‘my home is your home’. It’s a place where everyone is welcome, where laughter and conversation flow as freely as the food itself.
With its poolside setting, open-air ambience, and the buzz of Mama Shelter Dubai, this pop-up promises to be more than just a meal—it’s a full experience. Expect bold Filipino flavours, casual comfort, and Chef JP’s signature energy, all set against the backdrop of Dubai’s skyline.
So, if you’re after good food, good vibes, and a taste of the Philippines, make sure to head to Mama Skypool at Mama Shelter Dubai this weekend.
