A weekend in Morocco
Le Petit Cornichon — one of Morocco’s standout eateries listed on MENA’s 50 Best Restaurants 2025 — is set to host a special two-night takeover with Chef Robin Höfer, Executive Chef of Kraken and one of the region’s rising culinary names. The event will run on Friday and Saturday, 5 and 6 December, marking the chef’s first-ever appearance in the Moroccan capital.
Höfer, recently shortlisted as Gault&Millau UAE’s Future Great of the Year 2025, grew up in Überlingen on Lake Constance, where early days spent foraging and fishing shaped his instinctive, ingredient-first approach. His career has taken him through several MICHELIN-starred kitchens including Ossiano in Dubai, Disfrutar in Barcelona and Core by Clare Smyth in London, before building a reputation for immersive, memory-driven dining experiences in the UAE.
The Menu
For this takeover, Höfer presents a tasting journey anchored in flavour, texture and nostalgia. Highlights include the Golden Egg — a delicate mix of crab, tapioca and tom kha — and the Amaranth Cracker topped with cured hamachi, corn and leche de tigre. His playful take on Pizza layers tuna, piquillo, olive oil and pistachio, while the Oyster is refreshed with jalapeño granita, sour cream and cucumber.
He also brings his elevated Maultasche with Parmesan foam, beef cecina, a pesto sphere and roasted pine seeds, before lightening the palate with a Burnt Lemon served with Moroccan tea gelée, lumi and melissa cress. Dessert arrives in two parts: strawberry with yoghurt, basil and pink pepper, followed by a chocolate splash with praline, waffle flakes and Moroccan spices.
