In a city known for its bold culinary imagination, few openings stir excitement quite like Kraken. This is the latest project by the acclaimed Chef Grégoire Berger, the creative mind behind Ossiano, and Badr Benryane, the man behind Monarch Hospitality Group, a boutique hospitality company all set to champion concept-driven dining. The venue is slated to debut on Friday 17 October 2025, in Al Wasl.

Conceived as an ocean-inspired dining experience rooted entirely in this land, Kraken is a deep dive into the sensory magic of the sea. The connection to the Arabian Gulf is strong, with every dish on the menu intending to highlight the incredible marine life of the region.

The region of Dubai and the Emirates has a long-standing relationship with the sea, one that has given and nurtured for generations. The origins of the city are tied to its humble beginnings as a pearl diving and fishing village, where the indigenous population tapped into the riches of the Arabian Gulf for survival and trade.

The ethos of Kraken is meant to celebrate that time-honoured profession, and comes with a steadfast commitment to partnering with local and international fishermen and farmers, to spotlight sustainability and bring the finest ingredients to life.

Kraken draws its name and soul from the mythical sea creature said to appear in the Norwegian Sea off the coast of Norway that symbolizes strength and mystery. But instead of chaos, Berger and Benryane channel its energy into serenity, discovery, and depth. Every element, from the architecture to the plating, is designed to evoke a world beneath the waves. Guests can expect a narrative dining journey that mirrors the movement of the ocean – calm, rhythmic, and full of surprises.

Step inside Kraken, and the city fades away. The space is a visual poem dedicated to the ocean, crafted with fluid lines, pearlescent finishes, and soft illumination that moves like water. The color palette draws from deep blues, silvers, and sandy neutrals, while sculptural installations inspired by coral reefs lend a sense of organic grandeur.

Each dining corner feels intimate yet expansive, as though suspended between sea and sky. The result is a tranquil atmosphere that sets the stage for reflection, conversation, and culinary wonder.

At the heart of Kraken lies Berger’s commitment to UAE-sourced produce and his passion for reimagining familiar ingredients through global influences. The menu promises a series of tasting experiences that highlight the country’s coastal and desert ecosystems in harmony.

Expect locally caught fish delicately paired with foraged herbs, slow-cooked vegetables sourced from Emirati farms, and flavors that echo the salinity and vitality of the sea. While specific courses are yet to be revealed, Berger’s signature style ensures a presentation that delights both the eye and the palate.
