Dubai food lovers, clear your calendars. This February, MICHELIN-starred chef Vikas Khanna is returning to Kinara at JA Lake View Hotel for an intimate, one-night-only dining experience inspired by India’s royal kitchens.
Taking place on Friday, February 28, the exclusive dinner marks the second chapter of Kinara’s quarterly Forgotten Flavours series. Guests will dine in the presence of Chef Khanna himself, enjoying a refined six-course tasting menu that celebrates India’s historic palace cuisine, paired with grape selections from Sula Wines.
Designed as a rare, immersive evening, the experience invites diners to engage directly with the stories, techniques and traditions behind the dishes — making it as much about storytelling as it is about flavour.

India’s Royal Kitchens
Titled The Royal Kitchens of India, the menu draws from centuries-old recipes once prepared in palace kitchens across the subcontinent. These royal households transformed humble ingredients into elaborate expressions of culture, craft and indulgence — traditions that continue to influence Indian cuisine today.
Chef Khanna, alongside Chef Ashish Kumar and the Kinara team, reinterprets these dishes through a contemporary lens, balancing authenticity with modern refinement.
The six-course journey opens with Rathore’s 100 Layer Potatoes served with ker sangri pickle and yoghurt espuma, followed by a Kashmiri nadroo tikki filled with apricot and finished with yakhni sauce and lotus root chips.
Highlights include the iconic Awadhi galouti kebab, delicately finished with gold leaf and paired with Sula Shiraz, before moving into regal mains such as Royal Bengal rizala murgh or Chennar kalia, served alongside traditional breads. Dessert comes in the form of Odia royal chenna poda, offering a sweet finale rooted in tradition.

Kinara
Set within JA Lake View Hotel, Kinara is known for its immersive approach to Indian cuisine. Elegant interiors, aromatic spice displays and theatrical presentation enhance the storytelling behind each dish, creating a dining experience that feels both rooted and refined.
Following the success of the inaugural Utsav – Festivals of India edition, Forgotten Flavours continues to explore India’s lesser-known culinary narratives through themed menus and collaborative pairings.
