COYA Launches ‘The Spirits of Peru: Madre Tierra’, Inspired by Peru

A new global bar menu

COYA Restaurant & Bar is raising a glass to Peru with the launch of The Spirits of Peru: Madre Tierra, the first chapter in a new global bar menu series that celebrates the country’s landscapes, heritage and flavours — one cocktail at a time.

Launching first at COYA Dubai on 29 January, followed by COYA Abu Dhabi on 6 February, the menu will then travel across COYA destinations worldwide, including Mayfair, Monte Carlo and Marbella.

A Journey Through Peru

At the heart of Madre Tierra is a story-led approach to mixology. Guests follow the journey of Camila de Quilla, a modern explorer reconnecting with her Peruvian roots as she travels through the country’s three defining regions: La Costa, La Sierra and La Selva. Each destination inspires a collection of cocktails designed to evoke not just flavour, but emotion and a sense of place.

The journey begins in La Costa, where Peru’s Pacific coastline inspires bright, citrus-led and umami-rich cocktails. Expect serves such as La Mar, Agua de Chifa and Donna Luisa, alongside Chuno, created exclusively for COYA Dubai.

Next comes La Sierra, the Andean highlands, expressed through bolder, spicier cocktails including Arcoíris, La Rueda, Divino and Earl of Agave, reflecting the warmth, altitude and intensity of mountain life.

The experience culminates in La Selva, the Amazon rainforest, with lush, refreshing and herbaceous creations such as Tesoro del Campo, Coco y Choclo, Hay-Agua-Ska and Hualo, inspired by tropical abundance and rainfall-soaked greenery.

Pisco at the Heart of it All

The menu features 12 alcoholic cocktails, including three UAE exclusives, alongside four non-alcoholic cocktails crafted with the same level of creativity and balance. Central to the menu are COYA’s signature homemade Pisco infusions, continuing the brand’s long-standing celebration of Peru’s national spirit.

“This menu is an invitation to explore Peru through the senses,” says Sany Bacsi, Global Bar Manager at COYA. “We wanted to translate not just flavours, but memories, emotions and a true sense of place — all while staying true to the soul of the Pisco Bar.”

Created by COYA’s UAE-based bar team, led by Grégoire Schnerb, Head of Mixology, and Sany Bacsi, The Spirits of Peru: Madre Tierra marks the beginning of an annual global series, with future editions set to reinterpret Peru through new stories and ingredients.

For cocktail lovers, this is Peru — shaken, stirred and ready to be explored.
