New day, new menu in Dubai
Salmon Guru Dubai, the region’s outpost of Madrid’s award-winning cocktail institution, is shaking up the city’s bar scene once again. The Business Bay hotspot has unveiled ‘Eat Your Cocktail’, a daring new tasting menu that turns your favourite cocktails into edible art. The experience launches on 26 November and is available daily from 6pm to 8pm for AED 350.
Forget everything you know about drinking. ‘Eat Your Cocktail’ flips the script completely, transforming cocktails into multi-course bites designed to surprise, delight, and occasionally confuse in the best way possible.
Expect pearls, spheres, lollipops and tiny plates that blur the line between the bar and the kitchen, an experience created by mixology master and Bar Manager Elie Kreidy. Each course explores different textures and techniques, from freezing and poaching to spherification, creating a theatrical, multisensory tasting journey.

The Mad Bunny
One of the menu’s headline acts, The Mad Bunny is a cocktail disguised as a fried egg. The ‘yolk’ is actually a frozen cube of cocktail mixture shaped into a soft sphere, perched on a cloud of coconut mousse. A sprinkle of popping candy completes the edible illusion. One spoonful and the whole thing melts, cracks and fizzes into an explosion of flavour.
Inspiración Paloma
Equally playful is Inspiración Paloma – a translucent cocktail sphere that balances delicately on a nest of fresh French thyme. Guests are encouraged to lift the entire bundle and sip it whole, releasing notes of redistilled tequila, basil, strawberry, elderflower and grapefruit soda. It’s fresh, floral and surprisingly elegant.

Ultramarino
For something savoury, Ultramarino pushes the envelope with cocktail ‘caviar’. Using precision spherification, tiny pearls of gin, mezcal, sherry and rhubarb cordial burst inside a crisp cheese shell. The cocktail has even been rested in a clay amphora submerged in seawater – because why not?
Tutti Fruity Daiquiri
To finish, the Tutti Fruity Daiquiri delivers a golden chocolate lollipop with a boozy heart. Bite into its hand-moulded shell to release the daiquiri inside – a blend of rum matured in Tempranillo casks, orange, pineapple, strawberry, lemongrass and syrup. It’s part dessert, part drink, all fun.

A Bar That Refuses to Be Ordinary
Since opening in Madrid in 2016, Salmon Guru has built a cult following for its eccentric personality and boundary-pushing mixology. Led by founder Diego Cabrera, the brand has consistently appeared on the World’s 50 Best Bars list and is celebrated as Spain’s top bar.
Dubai’s outpost at The Opus by Omniyat mirrors the brand’s quirky spirit, split into three distinct spaces: a retro tropical bar, a neon-lit Asian night market and a walk-in comic book. It’s theatrical, immersive and unlike anything else in the region.
With ‘Eat Your Cocktail’, Salmon Guru Dubai continues to cement its reputation as one of the city’s most inventive drinking destinations — where nothing is quite what it seems, and the cocktails might just bite back.
