Brand new sips to explore
Sexy Fish Dubai is diving into deeper waters with a brand-new cocktail menu designed to take guests from aperitif hour to late-night party mode. Called Depths, the new drinks collection launched on 8 October 2026 across the restaurant’s four locations in Dubai, London, Manchester and Miami.
Inspired by the ever-changing world beneath the ocean’s surface, the menu brings together creative flavour combinations, theatrical presentation and a carefully considered drinks experience that evolves throughout the evening.

Four Chapters
Depths is divided into four chapters: Surface, Sunlight, Twilight and Abyss. Each reflects a different stage of the evening, with cocktails evolving in flavour, mood and intensity as the night unfolds.
Surface kicks things off with bright, refreshing serves designed to awaken the palate. One standout is Important Nonsense, made with Cygnet 22 Gin, raspberry, celery and tarragon. There’s also Open Your Eyes, combining Haku Vodka with Aperol, thyme, strawberry and verjus.
As the evening progresses, Sunlight brings more colour and energy to the table with drinks designed to complement Sexy Fish’s Japanese-inspired cuisine. Another Matcha? blends Another Hendrick’s Gin with matcha, yuzu and Curaçao, while The Boundary combines Suntory Toki Whisky with pear, jasmine, tonka and CO2.
For those settling in after dinner, Twilight introduces richer, more contemplative flavours. Halcyon combines Grey Goose Vodka with chamomile, pandan, passion fruit and yoghurt, while What Do Acorns Taste Like? offers a mid-strength mix of Ketel One Vodka, Tanqueray 0.0%, apricot, acorn and lemon balm.
Then comes Abyss, where the music gets louder and the drinks get bolder. Expect the Coral Margarita, mixing Casamigos Blanco Tequila with yuzushu, watermelon and wasabi, alongside Ganbei!, a vibrant combination of CÎROC Vodka, wintermelon, kalamansi and kaffir.
The Starring Role of Champagne
It’s not all about cocktails, either. Champagne features throughout the new menu, with bottles selected to suit each chapter of the evening. From Gosset Grand Blanc de Blancs N.V. at Surface to Dom Pérignon Luminous 2015 at Abyss, the selection moves from aperitif-friendly pours to celebratory late-night sips.
There’s also something for every kind of drinker, with full-strength, mid-strength and no-alcohol options available. Whether you’re easing into dinner or gearing up for a big night out, there’s a serve to suit the mood.
A Global Collaboration
Developed by Xavier Landais, director of beverage at Caprice Holdings, alongside the bar teams in all four cities, Depths is the result of months of tasting and collaboration. Head bartenders gathered at Sexy Fish London’s Bar Laboratory to taste and refine around 60 drinks before settling on the final selection.
The launch builds on Sexy Fish’s established drinks programme, which includes an extensive Japanese whisky collection and a celebrated Champagne offering. All four locations hold at least one Pinnacle Guide Pin, with the London bar recently progressing from one to two Pins.
