Launching on 7 May 2026 at Dubai Opera, Ramen Hisa introduces a more contemplative take on one of Japan’s most beloved comfort dishes – ramen. Created by the team behind TakaHisa, the concept shifts the focus from fast, casual ramen to a carefully composed, sensory-led dining experience.

At Ramen Hisa, every bowl is treated as a study in balance. Rather than bold, overpowering flavours, the emphasis lies on harmony – where broth, noodles and toppings are refined to work in unison. Expect subtle layers of umami, evolving textures and a lingering finish designed to be savoured slowly.

Ingredients are sourced from across Japan, with meticulous attention paid to quality and origin. Diners can expect both house-made noodles, crafted from aromatic wheat for a smooth and elastic bite, and egg noodles selected to enhance richness and depth where needed. The broths, meanwhile, prioritise clarity and precision, delivering flavour that unfolds gradually rather than all at once.

Signature bowls highlight some of Japan’s finest produce. Seafood ramen features premium bluefin tuna sourced from renowned supplier Yamayuki, offering a clean, oceanic flavour. Meat lovers can opt for indulgent options built around Wagyu, Kobe and Ozaki beef, each chosen for its balance of fat and depth.

The experience extends beyond the bowl. Designed to resemble a traditional Japanese home, the restaurant invites guests to remove their shoes before entering a serene, tatami-lined space with floor seating. With just 28 seats, the venue is intentionally intimate, encouraging diners to slow down and focus on the details of the meal.
