New openings for the new year

One of Souk Madinat Jumeirah’s most recognisable corners is returning with a new identity. Once a favourite of Dubai’s late-night crowd, the space has undergone a quiet transformation. This January, it reopens as Amaru — a restaurant and bar inspired by the colour, rhythm and cultural storytelling of Latin America.

A Myth Brought to Life

Amaru takes its name from the Incan serpent-dragon, a symbol of transformation, prosperity and connection — fitting for a venue with history and momentum. The design leans into that mythology, with carved wood, clay walls, snakeskin textures and projection-mapped visuals referencing ancient temples and folklore. It feels dramatic without being overdone: a space meant to spark curiosity.

At the centre of Amaru sits a striking bar, anchoring the room and directing the flow of the evening. Cocktails spotlight Latin spirits — bright piscos, smoky mezcals, sugarcane-forward serves — alongside ‘Sober Whispers’, a refined collection of spirit-free drinks for the growing no/low crowd. Music plays its part too, with nights that begin mellow and build toward DJ-led energy as dinner shifts into dancing.

The menu traces a culinary journey through Latin America. Expect Peruvian ceviche, Brazilian moqueca, fire-kissed grills, sharing plates and regionally rooted desserts. The approach is respectful and ingredient-led — authentic at its core, elevated for Dubai’s dining scene. Those seeking something more curated can book the Chef’s Table, tucked inside an intimate private dining room.

Rising six metres above the main space, the Galleria offers a separate bar and sweeping views of the room’s scale and design. It feels slightly more exclusive — ideal for groups, celebrations or anyone wanting a quieter start to the night before joining the crowd below.

A Homegrown Story

Although its heart beats to a Latin rhythm, Amaru is proudly born in Dubai, created by a local team with global ambitions. It isn’t just opening a restaurant — it’s reimagining a storied address and blending dining, music, architecture and theatre into one cohesive experience.

With its immersive design, bold flavours and confident sense of atmosphere, Amaru looks set to bring a fresh spark to Souk Madinat — and give Dubai a new late-night ritual.
