Sample new Nordic bakes
Dubai’s bakery scene has a fresh new addition, and it comes from one of the city’s most celebrated chefs. Chef Reif Othman, the culinary force behind REIF Japanese Kushiyaki, has launched his first-ever bakery concept, CRISP., bringing a taste of Copenhagen’s baking culture to Dubai.
The idea for CRISP. was born during Chef Reif’s five-week pop-up at Copenhagen’s iconic Tivoli Gardens in 2024. Inspired by the Danish capital’s deep appreciation for artisanal baking, he returned to Dubai determined to create a concept that blends Scandinavian simplicity with Japanese precision.

Now operating from REIF Japanese Kushiyaki in Dubai Hills and available via Deliveroo, CRISP. marks a new chapter for the chef, whose portfolio already spans ramen, pizza and Japanese grill concepts.
The bakery’s menu focuses on pastries and baked goods that combine Nordic inspiration with Japanese techniques.

Signature items include buttery Shio Pan (Japanese salt bread), a Pandan Kaya Jam Doughnut, Matcha Crème Caramel Castella and a Vanilla Brûlé Millefeuille. One of the standout creations is the Vanilla Milk Soft Serve Croissant Cone, a flaky pastry filled with soft serve that aims to bring together the best of both bakery and dessert worlds.
Rather than replicating a traditional European pâtisserie, CRISP. positions itself as a more personal expression of Chef Reif’s culinary journey. The concept draws from Japanese craftsmanship, Nordic baking traditions and his own flavour-first approach to food.

For a chef best known for pushing boundaries across multiple cuisines, baking presents a fresh challenge. As the concept’s launch notes explain, bread and pastry come with their own rhythm and rules — something Chef Reif has embraced in creating the brand.
CRISP. is available daily at REIF Japanese Kushiyaki in Dubai Hills for dine-in and takeaway from 8am. Customers can also order through Deliveroo between 8am and 10pm.

For Dubai diners who already follow Chef Reif’s restaurants closely, CRISP. offers a new reason to make an early start — and perhaps rethink breakfast altogether.
