A piece of Zuma’s legacy
Dubai’s dining scene is about to welcome a new Japanese hotspot as Noren officially opens in Jumeirah Lakes Towers (JLT) at the end of the month. The restaurant marks the first independent venture from Ilir Caushi and Pawel Kazanowski, two hospitality heavyweights who spent more than 15 years helping shape Zuma into one of the world’s most recognised Japanese restaurant brands.
Rather than creating another high-concept dining destination, the duo say Noren has been designed with a much simpler goal: to be the kind of restaurant people return to time and again.
Named after the traditional Japanese fabric curtain found at the entrance of restaurants and shops, Noren is designed to fit seamlessly into everyday life. Open from lunchtime until late evening, it caters to everything from casual drinks and quick bites at the bar to business lunches, family dinners and special occasions with a tasting menu.

The menu celebrates contemporary Japanese cooking with dishes including thinly sliced chutoro with jalapeño dressing, grilled tuna steak with wafu sauce, red miso glazed bone marrow, king crab with Hokkaido lemon butter and usugiri tomato served with Ibaraki soy sauce.
At the heart of the restaurant sits an island bar serving signature cocktails alongside an extensive sake programme.
The interiors reflect the same understated philosophy. Expect natural timber, handcrafted finishes and an open kitchen where the sushi counter and grill become part of the dining experience.
“We take the food seriously, but eating should be about enjoyment,” says Co-Founder and Executive Chef Pawel Kazanowski. “A lot of thought goes into every dish, but when it reaches the table, it should feel effortless.”

Co-Founder Ilir Caushi adds that Noren is built around genuine hospitality rather than spectacle. “It’s a restaurant for every occasion, or no occasion at all,” he says. “Every detail should simply make people want to come back.”
The founders deliberately chose JLT for its thriving independent food scene and strong sense of community, hoping Noren will become a neighbourhood favourite rather than a once-a-year destination.
With decades of international experience behind them, the pair are betting on exceptional food, warm hospitality and consistency instead of theatrics.
Reservations for Noren are now open ahead of its official opening later this month.
