Pulling back the curtain
Dubai’s speciality coffee scene is about to welcome a fresh new player, and it’s one that’s putting the roasting process centre stage.
Opening soon in Al Quoz, Kairos Coffee Assembly is set to become home to the UAE’s first Bellwether Shop Roaster – an electric, zero-emission machine that roasts coffee beans on-site every single day, right in front of guests.
Rather than hiding production behind closed doors, Kairos is inviting customers to slow down and watch every step of the process unfold.
The concept revolves around transparency and craftsmanship. Guests can expect four single-origin coffees, hand-brewed V60 pours, freshly laminated pastries baked every morning and a menu made entirely from scratch. Every element has been designed to celebrate quality over convenience.
The Bellwether roaster itself is a major talking point. Powered solely by electricity, it operates without flames or direct emissions while roasting coffee in full public view, offering visitors a behind-the-scenes look that’s rarely seen in cafés across the UAE.

Kairos is positioning itself as a creative gathering space rather than simply another coffee shop. Alongside its speciality coffee offering, visitors can expect a rotating programme of collaborations with ceramicists, textile studios and sonic designers, plus monthly art exhibitions and invite-only cupping sessions.
The name itself comes from the ancient Greek word kairos, meaning “the right moment” rather than chronological time, reflecting the brand’s focus on slowing down and appreciating everyday rituals.

Located in Dubai’s ever-growing creative district, Kairos hopes to carve out its own niche in a neighbourhood already known for independent cafés. The venue will be open daily from 7am to 6pm, with an official opening date expected to be announced soon.
