The fourth installment
Dubai’s award-winning piehaus is shining a spotlight on the people behind its ingredients with the latest edition of its Counter Culture series – and for the first time, it’s bringing sister restaurant 21grams along for the collaboration.
Running from until Saturday 23 August, Counter Culture Edition 004 sees piehaus partner with long-time produce supplier Pure Harvest, celebrating the UAE-grown fruit and vegetables that have featured across both restaurants’ menus for years. Rather than focusing on guest chefs, this edition turns the attention to the growers behind the ingredients, highlighting the role local producers play in creating standout dishes.

The collaboration introduces two limited-edition dishes available at both venues.
The Summer Basket Phyllo Pie layers hand-stretched phyllo with brown butter cream cheese, fresh Pure Harvest strawberries and blackberries, finished with edible flowers. Meanwhile, the Spanakopita Salad combines roasted beetroot, Pure Harvest spinach and blackberries with crispy phyllo, goat cheese, candied pecans, sesame seeds and a strawberry dressing.

To mark the launch, the first 50 guests who order one of the Counter Culture dishes will also receive a complimentary pack of Pure Harvest blackberries.
The limited-edition menu is available at piehaus in Alserkal Avenue and 21grams in Meyan Mall until August 23. It’s the latest chapter in piehaus’ Counter Culture series, which continues to explore creative collaborations while championing craftsmanship, community and locally grown produce.
