New bakes in town
There’s more than specialty coffee brewing at RAW Coffee Company these days. The Dubai-based roastery has launched PROOF Bakery, a new in-house bakery bringing freshly made breads, pastries and baked goods to RAW Café.
Launched in September, PROOF has been developed by RAW’s in-house F&B team, with everything made from scratch. The bakery sits within RAW Café, with open windows giving customers a peek at the baking process while they grab a coffee, settle in or pick something up to take away.

The Menu
The opening range covers plenty of bakery classics, including sourdough and white loaves, brioche buns, plain and olive ciabatta, simit and baguettes.
For something sweet, there are butter, almond and chocolate croissants, cinnamon buns and a selection of danishes. The range is set to expand, with RAW also planning to introduce products inspired by regional flavours as the bakery develops.
The move gives RAW greater control over quality and consistency while bringing its coffee and food offerings closer together. It also opens the door to potential future expansion, with the company looking at opportunities to eventually supply PROOF products to other businesses.

More Refreshes
PROOF isn’t the only change at RAW Café. The mezzanine has also received a refresh, with the updated space designed to be more work-friendly.
Guests can now use the area to work, meet or simply linger over their coffee and something fresh from the bakery.
With nearly two decades in Dubai’s specialty coffee scene, RAW is clearly looking beyond the cup. And if PROOF’s made-from-scratch approach takes off, this could be the start of a much bigger bakery chapter for the homegrown coffee brand.
