Coming together, for one night only
Indian and Malay flavours are coming together for one night at Khadak, with chefs Naved and Akmal joining forces for a seven-course dinner inspired by the culinary connections between the two cuisines.
A Marriage of Cultures
Taking place at Khadak in Al Wasl on Friday 25 September, the one-night collaboration with Harummanis explores the natural meeting points between Indian and Malay cooking.
Rather than blending the cuisines indiscriminately, the chefs are drawing on their distinct traditions while highlighting shared loves of spice, richness and layered flavour.
The seven-course menu kicks off with Jalmuri Ketoprak, a mix of rice puffs, sweet yoghurt foam, mustard oil, farsan, coriander and lime.
Lemak Ketam Kulcha combines garlic butter crab, coconut cream and turmeric with kulcha, while Prawn Toast puts a Dubai spin on the classic with shokupan, prawns, condensed milk and Philadelphia cheese.
The Goli Kebab features kid goat, shishito peppers, quail egg, sweet soy and pickle, served with brioche. Smashed Chicken Ghee Roast brings baby chicken roasted in ghee and spices, alongside coconut jasmine rice.
For dessert, Kachiya Moru Ais Krim is a spiced yoghurt popsicle with Kolhapuri jaggery, followed by a Pandan Kheer Crème Brûlée with tender coconut, mango ice cream and pistachio crumble.
