The first of many
Dubai’s dining scene has another limited-time experience worth booking. Khadak in Al Wasl is launching its first-ever Chef in Residence series, kicking off with veteran chef Habeeb Mohsin and a seven-course tasting menu that celebrates India’s forgotten recipes, regional traditions and the people who have kept them alive through generations.
The residency shines a spotlight on dishes that have been passed down through families and communities rather than preserved in cookbooks. Drawing on more than four decades of culinary experience, Chef Mohsin has curated a menu inspired by recipes he has learnt, refined and safeguarded throughout his career.
Inspired by India’s Culinary Heritage
The tasting menu takes diners across India through a series of heritage dishes, each with its own story. Highlights include Sufi Hari Mirch Ka Murgh with Akhrot Ka Kulcha, inspired by royal Awadhi-Mughlai kitchens, Gutti Vankaya, a much-loved Telugu classic, and Kaddu Ka Dalcha with Bagara Khana, showcasing the rich culinary influences of the Deccan.
The experience concludes with Begum Ki Kheer, a traditional dessert once prepared by newlywed brides as their first sweet offering to their in-laws, served alongside Hyderabadi Irani chai.

With Dubai’s appetite for chef collaborations continuing to grow, Khadak’s new residency series offers diners the chance to experience Indian cuisine through the lens of a chef dedicated to preserving its lesser-known culinary heritage.
