Dubai foodies, take note. Observatory Lounge at the Dubai Marriott Harbour Hotel & Suites is set to host its first-ever four hands dinner, bringing together resident Head Chef Daniel Gallo and well-known Dubai presenter and producer Layne Redman for a one-night-only culinary collaboration.

Taking place on Friday June 27, Harbour Heat promises an evening of bold flavours, cultural storytelling and vibrant music, all served against the backdrop of sweeping Dubai Marina views.

Known for its fusion of Asian and Latin American flavours, Observatory Lounge is venturing into new territory with the introduction of Caribbean influences for the first time.

The exclusive set menu reflects the personal histories and culinary inspirations of both collaborators, celebrating the connections between South American and Caribbean food traditions. Guests will begin with a selection of canapés before moving on to dishes including Salt Fish Fritters, Curry Goat Arepa and Jamaican Pepper Steak.

Expect smoky spices, colourful ingredients and plenty of flavour-packed plates designed to showcase the warmth and hospitality that define both regions.

The experience goes beyond the food. A live DJ soundtrack featuring reggae and dancehall classics will run throughout the evening, helping to bring the spirit of the Caribbean to Dubai Marina.

The combination of food, music and storytelling is designed to create an immersive dining experience that differs from the venue’s usual offering, making Harbour Heat a standout addition to Dubai’s summer dining calendar.
