Dubai’s award-winning piehaus is opening up its kitchen with The Art of Phyllo, a new 90-minute workshop that lets food lovers get hands-on with one of the world’s oldest baking traditions.
Hosted at the bakery’s home in Alserkal Avenue, the intimate experience is led by founder Stasha Toncev alongside Executive Chef Milan Jurkovic. Rather than a standard cooking class, the session focuses on the history, craftsmanship and ritual behind handmade phyllo, with plenty of opportunities to roll up your sleeves and learn the techniques yourself.

Working in small groups, guests will learn how to stretch delicate sheets of paper-thin phyllo by hand before transforming them into traditional pies. Along the way, there’ll be stories about the pastry’s cultural heritage, demonstrations from the experts and plenty of time to enjoy the slower pace of baking by hand.
The workshop finishes in the best possible way: gathering around the table to enjoy freshly baked pies together before taking home the handmade creations you’ve made during the session.

The launch comes after a standout year for piehaus, which was recently named Best Bakery at the Time Out Dubai Restaurant Awards 2026. Opened in 2025 by the team behind 21grams, the Dubai-born concept has built a loyal following thanks to its handmade phyllo pastries filled with comforting, flavour-packed combinations inspired by Balkan traditions and modern tastes.
If you’ve been looking for a foodie experience that’s a little different, this one promises plenty of pastry, storytelling and fresh-from-the-oven rewards.

The workshops accommodate group sizes of four to eight, and the experience includes a welcome beverage, guided workshop, all ingredients and equipment, freshly baked pies to enjoy during the session, a box of your handmade pies to take home and a recipe card. Private workshops and corporate bookings are also available.
